A story grown on Etna.
Sari is born from a small plot of 3,450 sqm. From a choice. From a question.
The choice was to stay, not to leave, to keep watching over a place and caring for it even when it would have been easier to imagine the future elsewhere. The question, instead, was how to turn that land and Etna’s botanicals into something alive, able to create value without losing the bond with its own origin.
From here begins Sari’s story: from an act of resilience, from the will to cultivate possibilities where others would have seen only limits. The land became a space for experimentation, meeting and growth; the plants, the starting point to create herbal teas, spices and experiences able to tell the territory through the work, the knowledge and the people who choose to live it.
Staying, for us, does not mean standing still. It means building, innovating and growing while keeping our roots strong.

SINCE 2018, THE CHOICE TO STAY
THE NAME, THE STONE, THE ROOTS
The project was born in 2018 from Roberto Carbone, then twenty-three, a very young entrepreneur from Catania, on a small plot in Trecastagni. Not from a long family farming tradition, but from the decision to put skills, research and work at the service of his own land. On the small piece of land, given to him by his parents as a graduation gift, the first crops of aromatic and medicinal plants become an open-air laboratory. Then come the drying tests, the blends, the dialogue with consumers, the development of formats and the building of a network of collaborations.
In Sicily’s historical narrative, the Catanese dialect term “Sari” evokes stones of lava rock. We chose this name because lava is origin and change: it keeps the volcano’s traces, reshapes the landscape, and creates the conditions for renewed fertility.
Sari brings this same idea into its way of doing business: starting from the land, moving through change, and building value over time.
2026: THE NEW SARI IS BORN
THE TERRITORY IS NOT A BACKDROP
In 2026 the path is strengthened with the establishment of Società Agricola SARI s.r.l. Società Benefit. It is not just a legal change: it is the shift from an individual entrepreneurial project to a shared structure, meant to grow with responsibility, complementary skills and measurable goals. The new Sari brings together farming, botanical processing, product development, research, innovation and joint projects with other companies and institutions.
We operate in Trecastagni, on Etna’s south-eastern slope. Here the volcanic soil, climate shifts and the landscape’s biodiversity shape a distinctive aromatic culture. We don’t use Etna as a mere promise of origin. We see it as a setting for work, research and inspiration. Organic botanicals come from our own crops and the local area. Our task is to state origins transparently and transform each ingredient with care.

Leads the company vision, brand development, market research, business relations and innovation projects. His background combines food technology, agricultural economics and consumer behavior studies.

Coordinates the sustainability strategy and the Benefit journey. As Head of common benefit, oversees goal setting, monitoring and reporting of the impact generated by the company.
